As a sorc player myself, I'd recommend the healing one over the damage-dealing one. the Twilight attacks slowly and only once every few seconds, but the heal hits the second you activate it. If you don't want both summons healing, make the familiar into the volatile one for an AoE effect.

Tormentor or Matriarch? Discussion. I’m currently running a pet Sorc with Volatile familiar and twilight matriarch. I don’t find that I need the heal that often from the matriarch, but when I do, it’s really nifty to have. I am mostly doing solo content (overland gear grinding, quests, etc).

Pets were never good in ESO, except maybe for soloing, but even that's debatable. Nothings really changed with TG, except that twilight matriarch is now one of the best heals in the game, making sorc healing more viable.
